We’ve taken strawberries and cream to the next level with these chocolate buckwheat pancakes! They’re gluten free, and packed with protein to make these the healthiest pancakes you’ve ever eaten! This recipe is by the wonderful Healthy Eating Jo.

Ingredients

For the pancakes:

1/2 cup buckwheat flour
1/2 cup unsweetened vanilla almond milk
1/2 banana, mashed
1/2 tsp gluten free baking powder
2 tbsp Du Chocolat
1 tbsp Natvia
1/2 tsp vanilla extract

For the sauce:
1 tbsp fat free plain Greek yogurt
1 tbsp vanilla protein powder
1/2 tsp vanilla extract
boiling water as required
sliced fresh strawberries

Method

  1. Blend together all pancake ingredients. The mixture should be quite thick.
  2. Fry in a pan with coconut oil until browned on both sides.

For the sauce:

  1. Mix together all ingredients until smooth and drizzle over pancakes.
  2. Top with fresh strawberries. Enjoy!
