A chocolate bar without all the added nasties, this cherry ripe slice is just as addictive as the original! And there’s absolutely no cooking involved.
1 1/2 cups almond meal
1 cup natural puffed rice
1/2 cup Du Chocolat
2/3 cup coconut oil, melted
1/4 cup Natvia
1/4 cup pitted fresh cherries
2 cups shredded coconut
2 tbsp coconut oil
2 tbsp Natvia
70g sugar free dark chocolate, melted
- Line a square baking tin with baking paper.
- Mix together all base ingredients with a pinch of salt. Press the mixture firmly across the bottom of the baking tin. Place in the fridge to set while you prepare the next layer.
- Blend the cherries, coconut, coconut oil and Natvia until well combined. Spread over the base, and then place back in the fridge to set.
- To top, drizzle over the melted dark chocolate and set in freezer. Cut into squares and serve.
