These mint-chocolate crepes are topped with a divine chocolate sauce for the ultimate breakfast indulgence! This recipe is by the very talented Sarah.

1 cup gluten free plain flour
2 cups of milk
3 eggs
2 tsp of Du Chocolat
1 drop of peppermint oil

Hot Chocolate Sauce
2 tbsp of rice malt syrup
2 tbsp of nut butter or tahini
20 gm of butter
2 tsp of Du Chocolat

1. Sift the flour into a bowl.
2. Separately whisk the milk, eggs and peppermint oil together in a jug then add this mixture to the flour. Whisk to combine.
3. Oil and preheat a pan. Use 2/3 tablespoons of batter mix, pour into pan and swirl to cover the base.
4. Cook for a couple of minutes on one side, toss and cook other side for another two minutes.
5. For the sauce, place all ingredients in a heat proof bowl. Heat in the microwave for 30 seconds on high, stir. If the butter has not quite melted, heat again. Stir and serve.
